Draft #9: Sweet!

It’s Bourbon's turn.  Created on Boxing Day, 2020 (12/26), this dram bursts onto the palate with a lip-smacking raft of sweetness to please those who seek the delights of toffee, caramel, and milk chocolate. 

Draft #9 is a mirror image of the Ryecentric Draft #8. The spice and complexity of the earlier draft features appear only at the tail end of Draft #9’s finish. 

There are two versions, the first, an unbridled sweet-tooth variation that runs a bit “hot”, and the second, mellower one, that employs a proportion barrel-aged versions of Draft #6 through 8, aka “Solera,” to pull the reins back a bit. These are labeled as Draft 8.5. Both are 47% ABV.
